The secret to a great chilli (stew) – add a bottle of lager!
I talked to my friend Joshua from New York the other day (well, he lives in Malmö now, but anyway). He gave me a great tip for a good chilli. After you have browned the onions and minced meat (with some chilli flakes), add a bottle of lager and let it reduce a bit. This is then the base of the sauce. I always make a nice garlicky tomato sauce to add at this point, rather than just tomatoes. Plus whatever beans you like best, kidney or rinsed black ones in my case. It turned out scrummy, eaten with bread and a salad. Yum!
