We order organic fruit and veg from Howbarrow once a week, so are lucky enough to be able to get fresh beetroots. But in the English supermarkets, what's on offer is not fresh. To be honest, I don't exactly know what's been done to these peeled squidgy root vegetables, I'd guess they've been pickled in some way. Whatever it is, they lose their texture, sweetness and subtle flavour in the process, and in my book they are therefore a complete waste of time.

Buy yourself a bunch of fresh beetroots (to be fair, you can sometimes get them in Booths, as well as in some farmshops such as Carleton near Penrith, where I think they grow them on the farm). Peel them and boil them – it takes longer than e g potatoes, as they are quite dense. When they are softish, take them out, slice them and make a lovely salad by spreading them on a plate, crumbling goats cheese or feta cheese over them, topping it with pepper and some olive oil – divine! The sweetness of the beetroots contrasts beautifully with the saltiness of the cheese. Or just serve them with butter and salt. I promise, it's like a completely different vegetable compared to its squidgy, flavourless alter ego!
