As our baby is due to arrive any day, we decided we'd better go and have a "last" dinner at the Jumble Room before that happens. Both Martin and I ordered a chicken dish (one of Chrissie's, according to Andy), which was so delicious I ate about twice as much as I can normally manage with my stomach being flattened by our future family member (bless him! or her...) I can't remember exactly what the dish was called, but I tried to emulate it for dinner last night, and below I describe how. Please forgive me, Chrissie, it's obviously not your recipe, but it turned out pretty good anyway. And thanks for being such an inspiration!
First I caramelised some onions, and roasted some pumpkin, sesame and caraway seeds separately in a dry frying pan. I then mixed the seeds in with the onions, added some cardamom, cinnamon and a tiny bit of curry powder, plus some tomato puree and honey. This sticky goo was the stuffing for the chicken. I stuffed the chicken (thighs as it happened), seasoned the skinned side with black pepper and paprika and fried them crispy in an oven proof pan. I then added some sherry, water and tomato puree to make a little bit of a sauce, and put them in the oven for 10 minutes.

At that point I added some carrots and aubergine slices which I had pre-fried a bit, and stuck the whole thing back in for another 10 minutes. I served it with wilted spinach and some sweet chili sauce. Very moorish!
