This time of year we more or less live on root vegetables – they are in season, affordable and heart warming. And so versatile! One of my favourite things to do is Borscht, which is of course a Russian beet root soup.

I'm sure there are hundreds of ways of making it, and I certainly never make it the same way twice. Basically, I start by sweating a finely chopped onion, adding any grated root veg that are lying around – of course beet root has to be included, and you need the fresh stuff! Also, while the veg are sweating, I add a good amount of tomato puree and a couple of bay leaves. Pour over the stock of your choice (for this I normally use beef or lamb) and simmer for 10–15 minutes. Serve with sour cream.
