Don't take this the wrong way, It's a chef thing !!
06.00am friday 15th June 2007.
I arrived at St Nicholas church in Whiteaven to be greeted by Keith Floyd and his wife Tess. We went through the running order for our demos, I prepped all the food, then at 9.00am I got told by Keith that we need to find the off licence.
Luckily enough for me I knew Gerrard Richardson was open and with no further ado we went to the Offy.
I felt fantastic as we walked through the crouds and both Keith and I signed autographs, posed for pictures with all the people at the festival, and generally went with the festival things, yet this was still 09.15am.
Now as I said, don't take this the wrong way, it is totally out of character for me, but to be sat in the VIP lounge at the cooking arena with Keith Floyd and drinking red wine, cold beer and fantastic malt whiskey,
Now you do the maths, it is a total chef thing, it's like going to Padstow and meeting Rick Stein for lunch,
oh I digress... sorry it's a Floyd thing. We were welcomed onstage with great rapture and tremendous applause, just between you and I, well I did all the cooking and Keith, well, got totally wrecked, took the mick out of me and was the fantastic Keith Floyd that we have all seen on tv.
I virtually had tears in my eyes, I was live with Floyd on-stage and he was the most complimentary gentleman that I have ever worked with. We bounced off each other like old hams, but when I said , "Keith you are a true artist " we brought the house down, as I raised my eyes and looked for divine intervention.
Then we went on the beer in Whitehaven to finish the day off, I crawled along the pavement back to my hotel and I can't remember getting into bed, but I can remember the day I had with Floyd himself.

I love your story Nick. I can just imagine being in your shoes with a slight sense of unreality as the day progressed. Only a scouser would have mentioned the word "artist" with Floyd on stage.... Hopefully you have recovered from your hangover ready to have more fun! - Martin

After gallons of water and tonnes of fruit I think I've cleaned my system out somewhat, The cooking onstage was great with him, we made langoustines with olive oil , chillies, garlic and ginger, Sea bass fillets with saffron, parsley and white wine, salmon fillets baked in filo pastry with hollandaise sauce and prawns,
that was on the friday of the festival,
on the saturday I was invited onstage with Annette Gibbons and we used Smoked haddock, Brown Shrimps, Smoked Mackeral,Sea trout and as she created culinary magic i was just amazed and basicly did what i was told,
She's great to work with and such a character, the audience just loved her,
On my demos on the saturday i roasted a whole sea bass filled with lemon, lime , ginger and garlic and then to serve it i sprinkled it with coriander, ginger and garlic and did the thai trick of pouring over scorching hot oil so it hissed and sizzled,
then i did crisp sauteed sea bass fillets with brown shrimp, coriander and parsley butter,
That was the saturday, totally sober, stress free and a lovely nights sleep in the hotel that night.
Now the sunday was just public havoc, Jean-Christophe Novelli came and the cooking arena was just rammed out all day,
He basicly did the dishes he did at Rheged last october, but I felt fantastic as i was both the compare and his assistant onstage,
we had the scallops in there shells with apples, foie gras and black pudding,
apple tart tatin with goats cheese and his trademark of sugar work with mixed berries and ice cream,
after the riot of autographes and photos with him and every woman from whiteaven, silloth, workington and frizington,
He went back to Eddie Stobbards VIP lounge and I cleaned up, and drove back home to ambleside, ready to start work the next morning at the Swan Hotel,
back to work as normal,
