Damson Dinners and Nick back at college.. On Saturday 29th I'm off to Crosthwaite to do the Westmorland Damson Association dinner. I've been looking forward to this for months now. The menu is to use damsons in every course and admittedly was quite difficult to get my head around as the humble damson isn't humble with all foods. It's not quite like other fruits that will go with savory items, so I had to get my creative head on when I produced the menu.

We are having.
Savin Hill Middle White Pork and Damson Terrine with Fruity Damson Chutney.
Roast Breast of Chicken marinaded with Damson Liquor and Thyme, on creamed mash and roasted root vegetables, with damson and rosemary jus.
Then to finish it's Damson Syllabub with Damson Ripple Coulis and Amaretti Crumble.
So it's gonna be a veritable feast and a very interesting evening.
I'm now back at Kendal College doing part time teaching, I take a class on Tuesday afternoons and last week was my first day. We made chicken breast filled with goat's cheese, sun blushed tomatoes and basil wrapped in pancetta with green pea and parmesan risotto. To see 17 students make it for themselves was fun to watch and quite an achievement. Tomorrow it's roast lamb chump with thyme mash, spinach and pesto.
It's great to demo the dish first for the students and then to watch them all rush away to make it for themselves, there isn't an inch of space around the cooking range in the kitchen as they all cook and prepare and the looks on their faces when they sit down and eat their dishes are great.

I think my son Matt might be one of your students, if so be sure to push him hard! - he just got back into the colleges Culinary team and is chuffed as they will be cooking in Chicago (one of my favourite American cities) next year! - Martin
