  Ban boring salads!

Why are side salads as served, particularly in pubs, often so completely unappetising? I think the basic rule for any good salad is that all the ingredients should be really tasty on their own. If we dissect a standard pub salad what do we have? Great big chunks of raw red onion, raw green peppers, pale iceberg lettuc, bitter red lollo rosso leaves and dressing in a bag. I realise rocket or fresh spinach are probably not economical to use as a base, but still. Salads need to be seasoned just like any other food!
