  Braving the Solway winds....

The weather promised some bright periods so we threw caution to the wind, and there's plenty of that by the sea, and decided to dust off the barbeque and get it lit for the first of our alfresco dinners of 2006.The rains arrived and the wind became gale force but we battled on with Paul wheeling the bbq from the garden into the opened barn for shelter.

The swallows weren't really sure about visiting their nests for a few hours but Paul cooked vegetable kebabs, pork steaks with mustard, the ubiquitous Cumberland sausage and aubergine slices, followed by whole bananas cooked over the dying fire with dark chocolate studded in the fruits.

I'd like to share with you what I did for the Garlicky Aubergine;  I cut the washed aubergine then sliced them thickly lengthways. In a small bowl I mixed lots of olive oil and crushed garlic with salt and pepper. Just before putting them on the grill I brushed the oil liberally onto both sides of aubergine. (Brushing on the oil gives plenty of flavour with fewer calories.)  Paul turned them after a few minutes. We served them with a yogurt dressing with lots of fresh chopped mint. Delish.

The wind and rain continued and we ate the meats and veggie kebabs with a greeen salad from the garden, in the house. It's reminded us of the wonderful taste of charcoal grilled food so we'll try again though next time the forecast is for a quiet, sunny evening.
