  Swedish fish – children's favourite

My little nieces and nephew were visiting from Sweden last weekend and I cooked a childhood cod favourite for them, which went down really well. It's about as easy as fish gets and served with the ubiquitous Swedish boiled potatoes, great for soaking up the sauce with. For the seven of us I used one kilo of cod loin.

Set the oven to 200°C. Rub the cod with quite a lot of curry powder (about 4–5 tsp to a kilo of fish) and salt. Place it in a greased ovenproof dish. Pour over about 1/2 pint of double cream an cover with grated mature cheddar or some other cheese that you like. Cover the dish with tin foil and cook in the oven for about half an hour (you may want to check it after 20 mins or so, you don't want the fish over done). Make sure the oven proof dish is deep enough; the cream may boil over and spill (it's happened to me before!)

This dish is guaranteed to go down well with the little ones!
